Hey Guys!!!
So from a trip to California to dinner guests, then a trip to Sedona, last week was spent in a busy blur with family and dear friends… Although the road trips were long and trying..
“Mommy are we there yet…Mommy, I have to go potty!”
“Oh my goodness, AGAIN? You just went potty!”
“Mommy, mommy, mommy, mommmmyyy”
“Noah, Noah, Noah, Noah, Noooaaah”
Eyebrow raised, Noah responds in a very mater of fact way…
“Mommy, I’m right here.. I heard you the first time you said my name..”
(Really, little man..My thoughts exactly?)
Lol.. But I know it’s those moments, pictures, smiles and giggles that will be remembered looking back throughout the years 🙂 and though I’m very tired, and it will probably take me a few days to recover, the fun we had and the love that was shared was worth It. Indeed, very worth it.

So chocolate is a pretty big deal for my little family. Believe it or not, the cravings start with my husband, then it’s my little man, and even my one year-old squeals at the sight of that dark yummy stuff…
I’m not a health fanatic, but I’ll be honest and say I definitely tend to lean more in that direction 🙂 So we try and eat pretty “clean” at home 🙂 Don’t get me wrong, the occasional “treat” is good and fine but I’m always looking for yummy alternatives or ways to modify the high fat, high sugar, highly processed and low nutritional value diet that we are all now so unaware of and accustomed to. If not for ourselves, then for our kids, right? They deserve the best!!
Which brings me to this amazing…(drum roll please…..)
*Black Bean Avocado Brownie*Recipe!!!
Ok. Ok. I know what ur thinking…”Say whaaat?” haha.. Trust me. My kids are as picky as yours.. And my my husband even more so lol! And they absolutely love them!! These brownies are moist and fudgy! High in protein, nutrition and naturally gluten-free!!! I’ve tried a few different recipes and after changing a few things around, swiping this ingredient out for another… These brownies are probably the best I’ve ever had! YUM!!!! And come on, think about it…Black bean and avocado are in the SAME sentience as brownie! Isn’t that the least bit intriguing?? 😉 You’ve got to try them! 😀
Here’s what you’ll need 🙂
Ingredients:
1 -15 oz can of Black beans drained and rinsed.
Two large egg whites
One large egg
One large avocado
1 teaspoon coconut oil
2/3 cup unsweetened Cocoa powder
1/4 teaspoon salt
1/4 Baking soda
1/4 teaspoon baking powder
3 teaspoons pure vanilla extract
1 cup dark brown sugar or more, depending on how sweet you want to go
1/3 cup chocolate chips
However many walnuts you want for the topping 🙂
Instructions:
Pre-heat oven to 350°F. Grease an 8 x 8″ baking pan. Place all ingredients besides chocolate chips and eggs into the blender or food processor. Process until ingredients form a smooth batter. This is the perfect time to taste your batter and see if you would like to add a bit more sugar! Add eggs and process once more. This batter needs to be very thick, its a must in order to get a really fudgy texture. But if it’s too thick and you’re having trouble processing it, add a teaspoon or two of water. Pour batter into pan and sprinkle with walnuts or your topping of choice. Bake for 40 to 45 minutes or until the top of the brownies begin to crack and inserted knife in center comes out somewhat clean. Cool pan completely on wire rack.. Eat right away or I prefer to pop them in the fridge for a few hours (I think the texture is best when cold) and then devour!
